Looking for a solution for that leftover chicken? Save money and make mouths happy at the same time.
Whether you are cooking for 2 or 6 or 8, you know how to estimate dinner to fit your family. How much chicken you need, who eats light or dark meat. Leftovers either don’t happen, or are negligible. All that changes when you host. We tend to round up servings and serve more dishes than if we were eating on our own. The result is we feel bad throwing the leftovers away and instead let them sit in the fridge until they spoil and we have no choice. Here is one solution for the leftover chicken that your entire family will enjoy.
What You Will Need:
- For leftover chicken dinner, the first thing you will need is chicken. Any chicken will do. If it is chicken with bone in, you will need to remove that first.
- 4 Onions
- Curry
- Baguettes
- An Air Fryer (If you don’t have one you can use a large frying pan)
- Oil
How To Transform Those Leftovers:
- Chop chicken into bite size pieces
- Slice onions
- Heat oil in pan or air fryer, add chicken, generous amount of curry, salt and pepper to taste. Air fry or fry until chicken is heated through.
- Remove chicken from pan, add onions. It will pick up the brown bits from the chicken. Once onions well done, add chicken back into the pan with the onions. Stir together a few minutes before turning off heat.
Putting It All Together For That Gourmet Dinner:
My family loves this Schwarma style chicken served in baguettes, but pitas, lafa bread or served over rice are all good dinner options too. Add a salad, or a soup and your family will have no idea you are serving them last night’s dinner. This is a great time saver too, and useful when your schedule is a little tight!
